Is there a way to modify the Service Appointment Popover? I found the side panel design, but not this one.

This popover is controlled through Field Sets, per Salesforce Help, use field sets to control which fields appear in different sections of the Field Service Classic Dispatch Console, and popovers in the Scheduling Console are explicitly listed as one of the customizable areas this applies to.
To edit it:
1. Setup > Object Manager > Service Appointment
2. Click Field Sets
3. Find the field set specifically tied to the popover/card view (not the side panel one you already found), edit it to add/remove/reorder fields
If you're not sure which field set name maps to this specific popover, Setup > Object Manager > Service Appointment > Field Sets will list all of them by name, look for one referencing "Popover" or "Card" specifically.
