When creating a new opportunity, I only want our reps to see a few specific fields, and not the entirety of all the fields that exist on an opportunity. I thought it might have been going to Global Actions - New Opportunity and looking at the layout, but it only shows that 4 fields should appear and when you actually go to create it, all fields show up.

Andrew, you can create a quick action/global quick action to create a new opportunity, which will allow you to choose a few fields in the quick action layout to.
