I please need advise on how to update the Sign-up page for the Volunteers for Salesforce sites...I would like to change the wording/terminology on the page...

all of the configuration options are described in the Installation & Configuration Guide at http://djhconsulting.com/volunteers-for-salesforce/volunteers-for-salesforce-documentation/ this includes information on translating labels to get the terminology you want.
