My non-profit organization is in the middle of the process of data mapping and switching from Affinaquest to NPSP. I am wondering if anyone has the answer to what happens to my data in Affinaquest the subscription ends?

I'm not sure about Affinaquest specifically, however in broader terms...
When a licensed managed package expires, you will lose access to all objects, fields *and* the data contained in them. Your best bet is to be sure all data is exported before that date.
