Trying to copy and paste my quote templates, currently in Word, into a HTML template content section so I don't have to create the entire template from scratch, and have them look like the templates we already have in place. I believe I am running into issues with the HTML code. When pasting the content from Word it brings over HTML tags that are not supported by Salesforce so the document won't generate. Is there any work around for this? It would save me months of time to not have to buld our templates from scratch and deal with all the formatting issues that comes with not knowing HTML.

There's really no workaround for this. There is HTML that Word supports that the editor that CPQ uses does not.

Perhaps an easier solution is to use Conga Quote Generator

It uses Word to create the templates. Reach out to your Account Executive for details on how to get installation links.
