I want to rename a custom date field, which is referenced in many workflow rules and process builder processes.
Will renaming the field break the rules? Will the name get updated in the workflow rules and processes where it was referenced autmatically or should I manually update it?

You can change the Field Label without any issues. That will not break anything.
But if you try to change the API Name, Salesforce will throw an error saying that it is accessed in these many Workflows / Process / Formulas / Apex etc. and you will not be allowed to change it even!
