I cannot use a process builder as we cannot refer to the contact, my thought was to use a flow but not sure if this would work either.
Can somebody advise on how they would solve this issue?
The Application field is a picklist on the opportunity and a multi-select picklist on the contact.
I have created a flow which gets the contact ID, but not sure how to pull the value (hence the reason I think this may need to be achieved with an APEX trigger)

What do you mean "add" and keep what was already there? A field can only contain one value.
