There is a requirement to create a view on Case and sort it based on the recent email communication received .I cant see the activity history fields on the fields drop-down when creating the case view .Can anyone help with this please?

You can use Rollup helper (https://appexchange.salesforce.com/listingDetail?listingId=a0N30000009i3UpEAI) which provides you the choice to create Rollup on lookup relationship and then create roll-up summary to calculate MAX date and you are good to go !!
