If it is a picklist value you can set the default for each record type (and remove other values from the list for that record type)
Otherwise create a workflow rules to update the field to a specific value based on Case record type when created.
Another option is to create a "new" custom button that defaults the value for the field but I would advocate using Workflow instead.
