So I’m looking for creative ways to ‘fool’ the system (a field redirect, spoofing the field location, truncation code for the description or some other method. I don’t need the description data to come into salesforce so the solution does not need to maintain the integrity of the data in that field. Simply shortening the description within QuickBooks is not an option unfortunately.
At this point I’m pretty much dead in the water. Thanks in advance.

Tips for ensuring ongoing sync success
The following are some measures you can take to ensure your sync continues to run smoothly
Make sure the settings reflect what you intend to sync between Salesforce and QuickBooks
Do not edit or delete the ID field values
Ensure all the fields that are needed by the sync process appear on the Salesforce page layouts
Ensure that there aren’t custom validations (required, not viewable, etc.) that will prevent the sync process from
updating fields
Professional and Enterprise Edition Users must also ensure that
o All items have a price. Salesforce will not accept products that have a $0 price
o QuickBooks transactions that contain items with long descriptions (>250 characters) will not be synced to
Salesforce as an opportunity. You will need to modify your item descriptions if they exceed 250 characters
