I have put the following in an email template:
From: {!Contact.FirstName} {!Contact.LastName}
Organisation: {!Account.Name}
Address:
{!Account.BillingAddress}
{!Account.BillingCity}
{!Account.BillingCountry}
{!Account.BillingPostalCode}
Email: {!Contact.Email}
IP Addresses: {!Account.IP_Address__c}
When I hit 'Send Test and Verify Merge Fields' it works fine, because I choose a contact. However, when I create the account on Salesforce (which definitely has contact details), the email sent doesn't contain any of the contact information, the fields are blank.
Why is this? Am I doing something wrong or will it not allow Account and Contact info on the same email?

The problem you are running into is that an Account has many Contacts, so you can't reference a specific Contact's fields from an Account. If you send the email on Contact creation instead, you'll be OK, since each Contact has only 1 Account related to it.
