I just added the territory field on the opportunity page layout, and it is not there...
I would like to see the opportunity territory or to change it, but is not there.
Any ideas?

You have to enable Territory Management in your org. Once that is enabled, you'll need to make sure the field is added to all the page layouts you are using. Here's a link to Territory Management for the rest of the story: http://na1.salesforce.com/help/doc/en/territories_def.htm
