As far as I know there are two ways, and each work exactly once in every report, but maybe being able to change two names is better than nothing.
Workaround 1: Create a bucket field (which you can give a name) of one of your fields, but don't put any values in any buckets. This will then show the original values, but the field will have a new name.
Workaround 2: Create a row formula field (which you can give a name), and enter just the name of one of your fields in the formula. This will then simply show the original values, but again under a different name.
