Any idea on what I need to adjust to allow it to be available in the list or what is preventing from appearing in the list?

Sorry, I missed it. Stage is not controlled by Record type.
Pls check the Sales Processes. It may be missing to the 'Selected Values' section.
Setup ---> App Setup ---> Customize ---> Opportunities ---> Sales Processes
Make sure the value you are looking are in 'Selected Values' box.
