Hi Olivia,
The labels are based on the field labels, so you don't have control over those at the chart level.
I have in the past used Report Formulas for things like "Number of Cases" instead of "Record Count" where I just create a formula that is the "RowCount" and name the formula what I want the label to be.
You can only do this with fields that you are summarizing (so you can change something like "Account Name").
