Just to confirm, once the switch is made to Lightning, all users will have the button on their page to switch back to Classic until the Winter release. BUT what if we don't want to give them the ability to go back to Classic? Is there a way to remove the button?

You can hide the switcher or turn off classic for your org. Take a look at the steps in this article:
