Are there any plans to allow customization to the Send Email Quick Action? Would love to be able to expose other custom fields from the Email object on this to use for further automation (ie: automated follow-up task creation) , etc.

Yes - the workaround would mean every user would get a follow-up task - or the rule would have to look for keywords in a subject line (which would never work 100% of the time). Love the future feature idea!
