I have an action to LogANote on a custom object called Service. I'm using a Text Template resource to try and add a formatted note like so
but the logged note actually shows up like so, which is just showing the formatting tags vs. actual formatting, how can I do this properly?

If you're creating a task, I would simply go with plain text.
Or you can create a rich text field and save the formatted text in this new field and a text version in the standard Comment field
