I have been looking through the Get Started with Salesforce Scheduler, but I am unable to find the app in the app launcher - does anyone know how I get access to this please.

Salesforce scheduler is available only in few editions Enterprise, Performance, and Unlimited Editions. Also it may cost extra.

if you are using developer edition to try this then it wont be available.
