I would need to generate documents by setting a template, extracting some common and custom fields from the starting object. Is it possible?
I found some external tools that allow you to use this function, but would it be possible to do it without the help of these?

You can Generate Document from a Visualforce Page,
All you need to do, Render it as Pdf.
