We currently have a totally separate database for our sponsor children & I'm wanting to add them into salesforce to minimise the amount of databases we have.

Any one in the system that is a "Person" should be a contact so that you do not lose the contact obeject functionality. I would make sponsor and sponsored child as two record types on contact. You can then create one object as a junction called "Sponsorship".
