My question is: althought the relationship is between an Opportunitiy and a Contact, is there a way to get those Opportunity field values into a Related List on the Account?

If I understand it right, you want to see the Opportunity Related List on an Account and maybe customize the field display. You can do this:
1. Click on Setup on the top right hand corner.
2. Customize -> Accounts->Page Layouts
3. Edit the Layout/(s)
4. Click on Related List in the top pane and drag the Opportunity related list anywhere on the page.
5. Click on the wrench icon next to the dragged Opportunity Related List and set display fields as you desire.
