I think this free book from salesforce is a great resource. I have made all my interns work through it their first week or two: http://wiki.developerforce.com/page/Force_Platform_Fundamentals
I also heard http://www.forceprepare.com/ mentioned at dreamforce.
But by far I have learned the most by simply googling things as they come up. If you can't find it there, ask it here.
I wouldn't personally be in a huge rush to get certified. Being able to pass a test and do your day to day activities in your job are two seperate things. By far the biggest benefit of being certified is that you are forced to read the release notes if you want to keep your certification. You can learn a bit from this as well but if you don't have the experience, many of the notes might be over your head.
