If we're on a classic org, will our users see the Mobile Only view only in the app menu? If the rest of our apps are not lightning apps, I assume they won't show up in the mobile app menu?

Hi Jason, that's correct. Users will only see the Mobile Only app, with their existing mobile navigation items. In the future if you create Lightning apps and enable them for mobile, your users will have access to those as well in the App Launcher.
