We have a user that when she opens LEADS, she wants to see DETAILS but it defaults to ACTIVITIES. Is there a way to change this or will Lightning "learn" her activity & change later on?

The default tab is not a feature that can be controlled at the user level. It can be changed in the Lightning App Builder and then that page can be assigned at the profile level. It’s probably a good time to survey other users to see what the preference is for them.
