I need the above fields not to be visible for Partner Users who can have access to Opportunity Record page and edit a record but edit a few other fields, and not see Opportunity Stage, Opportunity Name and Close Date.

@Ciprian Vrânceanu I believe you can leverage Dynamic form and hide the fields by setting field visibility based on user's profile.
