From what I have read in the Online Help and Knowledge Articles, apparently the option to select the Record Type when you create a new Task or Event record from a detail page like Lead, Contact, Opportunity, Account, etc, isn't "a thing" in Lightning. The only option is to create a Quick-Action for each Task/Event Record Type and add them to each Classic Page Layout so that they can be (manually) added to each Lightning Page Layout.
That's... [checks notes] a lotta Admin Grunt work for something that is baked in to Classic UX

Thanks, I was hoping to be able to do it from the Activity Composer without having to add another Activity Related List to the Page Layout, or create a custom Quick-Action for each Activity Record Type
