I want to use datatableFSC for my flows to show records. But I am unable to create a collection of an Sobject that i want to show the records of. How do i create a collection?

You should be able to do this within flow by creating a new resource. You'll want to select Variable as the resource type, Record as the Data Type, which then allows you to pick which object you wish to use. Finally, you'll want to check the option to allow multiple values so that it treats the variable as a collection variable.  There's also an option to mark the variable as an input variable. This is useful, if you wish to pass a collection into this variable from outside the flow, such as if trying to pass information into the flow from process builder.
