Does having a "Salesforce Platform" License mean that the user only has the option of having a "Salesforce Platform User" Profile? I have minimised the number of Profiles in our Org down to a min but they are customised.

Again answering myself here as my Account Manager confirmed I can clone the Standard Platform Profile associated to a Salesforce Standard Platform License and customize it accordingly (has limited access to Objects etc..)
