I'm wondering how to pull a report that counts the number of donors each year over a particular period (like 5 or 10 years). I can pull a matrix report on donations but even if I summarize by Account, I can only get a count of donations, not donors. Since many people donate multiple times in any given year, this approach won't work. How have you done this with your organization?

OK, I did indeed verify that this approach really does sum unique occurrences of Accounts at every summary level. So if an Account is in multiple sub-summaries, it will only be counted once in each summary level and once in the grand total. This is a very cool feature, sad I didn't know about it earlier, but glad to know about it now!
