We got everything switched over to Inbox on Outlook and after some trials it is functoning properly.  We did miss a few days where emails did not log or sync, I was told inially that it would "catch up" those that were missed for up to six months, but that does not seem to be happening.  Is there any way to manually log missed emails in inbox or are we stuck?

    The Outlook Configurations Tab is being phased out, moving to Outlook Integration and Lighting Sync. When Eintein is enabled, the Outlook Integration area can look like this which you mentioned above about Lightnign Sync.

    As I am not sure your previous integration with Outlook, you can also check here to see if any previous Saleforce from Outlook mappings still active at the moment. As users can connect with Einstein with their office accounts directly within their User Settings.

    Might be useful to have a user or two completely disconnect their office accounts from Salesforce, including logging out from the Outlook side. And then, re-connecting their accounts from their User Settings and re-opening the Outlook Add-in and Logging back-in.
