This is my post first so apologies if this has already been asked before. I am new to Salesforce and have started to build custom objects to start using it for managing my supplier information. Should I create a new user profile for Supplier Management? If so, does this take up a new licence or can I change my existing profile to the Supplier Management profile?

First, creating a profile does not take up a license. Only a user can.
As a general rule, you would create a profiel for a group of people you would give the same permissions to. If I take this object as an example, you may want some users to only see those records, some others may need to be able to create, edit and delete them. This would be 2 separate profiles

One thing though, if you are an administrator, do not change your profile, or you'll have less permissions than you currently have. Moreover, if you are the only admin in the org, this will cause you issues very quickly
