Change the default recipient for a custom button email

Change the default recipient for a custom button email. When selecting the button the email has a name in the default send to; how can this be changed?

    Hi Glen,

     

    Are you the salesforce system administrator for your company? worth checking there, the button is a custom process for your company, look what it calls and you can predefined someother there
