Okay, for starters I would get your Users set up with the Salesforce for Outlook =>
Desktop-Based Salesforce for Outlook

That will allow them to sync emails, tasks and meetings from Outlook to SFDC (and vice versa)
Basically "if it's in your Outlook Calendar" it's stored as an Event in SFDC, anything else is stored as a Task.
You can take the Report I posted, and use the checkbox next to the User Name and the Drill Down button to filter by selected User(s) from a single Report
