We are using product family and a custom product category field (picklist). I tried to create some subtotal fields on the opportunity that subtotal the products based on the sum of these product categories, and product family. So for example, 3 products from the X product family at $50 each would sum into a field called "Subtotal X Amount: $150". The issue is when I create the rollup field on opportunity with summarized object under opportunity product, it doesn't give me the product family or product category as options to sum.
