We have talked through this quite a bit and I am ready to provide the necessary profile for them to log in but I am not an IT person by trade and am wondering if I may be overlooking things I should consider here. Should I create this person a profile much like an Admin profile but remove some of the permissions? If so, what would be the permissions you would remove?
I'm fairly certain they won't "harm" our instance or our data. But I want to make sure before I had over the key to the city, I haven't missed something important.
Any advice would be greatly appreciated.

It depends on what you to give access to the user and at what level. you can create a custom profile and give them read only permission. So that user and read it but not able to edit anythings. you can hide sensitive fields from the users.
