What are the definitions for each opportunity stage

I am trying to find a document that lists the criteria of each opportunity stage- ie. what does inquiry mean, what is validate? Qualify?  etc...a and how to move each opportunity along in the process- we cannot select the stage, so it is based on something-what is it?

    Great feedback.  I guess what I really want to know is, how can I push and oppty from one stage to the next.  The way SFDC was setup in my last company, I could manually move it along and then confidence levels, etc  would go along with it.  Here, I cannot manually select the stage...my first oppty is stuck in "inquiry" and I want to put it in "Qualify" stage...thanks for your help!
