This does not show in the Preview, only in the sent letter.
This does not occur when text is typing directly in or copied from a text editor, like Notepad. Currently, I warn users to not copy/paste from Word. Is there any way around this?

Funky things happen when copying/pasting from word. I suggest that you highlight your text in Word. I have even seen it when pasting into Notepad and then into the template editor. Right click and select Paragraph and set as follows:
