For example sake- If I publish an object called Engagement, and a field called Client--- it will auto map the client field in the Engagement object on the connected instance.
How do I specific a different object/field mapping? Is there a way to say I want the Client field in the engagement object mapped to somethign completely different on the connected instance?

After you have the connection set up, you can modify the field mappings from the Connections tab. You can only modify field mappings on Subscribed Fields, not Published Fields. It's up to the subscriber to change their own mapping.
The screen you are looking for is called "Edit Subscribed Fields" and is accessible by clicking Edit next to a Subscribed Object in the Connections tab.
