Best practices for tracking product demonstrations in SFDC?

I am wondering if anyone has an experience tracking product demonstrations in SFDC.  We currently have a custom object for Proof of Concepts but we are looking to track how many product demos the Sales Engineering team performs as well.  A demo would happen at the very beginning of our prospecting activies so there likely would not be an opportunity to relate a demo to.  I am considering a checkbox on the account record to indicate "Demo performed" but that would not tie directly to pipeline and closed revenue.
