I have the Professional edition and am looking for a way to put notes with time and date stamps in leads. There will be multiple calls that we need to log so I'm looking to create a field that will allow us to put notes in and when we go into it each time the date and time stamp are automatically added.
Workflow is not available in my edition.

If you want to stamp date and time in the same field again and again, even using coding I doubt it is possible.
One design option that i can suggest is to create a new object for storing notes and establishing a relationship with Leads. This way, with the same lead object you can have various notes records. Now you can put more than one note in a lead and also date and time will be automatically captured.
