I need to convert the COUNTRY field on the address data type (both on Accounts and Contacts) to be a picklist rather than a text field. This is so our users HAVE to select from a list of country names rather than writing them in themselves.
Does anyone have experience with this? Will I have to replace the standard billing, shipping, mailing address fields with my own custom fields? If so, will this impact standard label printing/mail merge functionality?

@Neal Mengel: A bit dirty, but easy to implement. Will follow your advice, SalesForce has promised now there will be some news released on DreamForce this year... while that goes this fix will do.
I wonder how long it will take to my users to understand that altough they can see the country on billing address they shouldn't really type there, but in the second country field.
