It needs to
1. Set jump_start_status__c to 'attended'
2. Set jump_start_date__c to 'Today'
3. delete them from the jump_start campaign.
Is this overly complicated?

If you have one and only one jump_start campaign then it shouldn't be that hard. You can use the code here as a starting point. It applies to Case, obviously, not Lead, but it's trivial to change it and the same principles apply to what you want to do.
