You have a couple of options. 1) You can use reports and then export your data to excel or 2) You could have the API enabled and then use the Data Loader. The downside is that Professional Edition customers do not have the API enabled by default this is an upgrade that has a fee associated. I would contact your sales rep for more info if you want to explore option 2. Here is a link to more information on the Data Loader in online help.
