After looking online I see companies offering ways to connect to Ultipro data but I didn't run across anything saying "here's how you can connect Ultipro data to Tableau"
I'm curious if an automated connection is possible and if so by what means.

Is this the same Ultipro? https://connect.ultipro.com/documentation#/api
Like most Saas offerings, you might have to use the API to query the data.
