We are trying to implement API Gateway solution, am currently new to mulesoft and looking for any good tutorials and use cases on how to start building it and moving to deployment.

Instead of looking for tutorials, I’d recommend getting some proper training. Mulesoft offers both free (self-paced) training, and paid (instuctor-led) training. Check the Training & Certification website for more details.
