Hi,
I want to use EAC to catch Event activities and have those recorded on the Contact/Account. Whats the best practise here and whats get synced. I know there are 3 options from Salesforce, from O365 and both directions, what whats the preferred and what will happen? Will the Sales Rep only sync the Contact they are an owner for or will they get more?

We do not sync contacts. We found that private contacts were synced creating contacts without accounts. Duplicate records can be easily created. We also have some validation rules on contact creation.
