Overridden Salesforce "New" button with Visualforce Page how to ignore a certain profile or role

Question

I have overridden the Standard Salesforce NEW button for Opportunities to go to a Visualforce Page. This VF page redirects the users to a Flow. Everything is working fine with this.

However, now I am onboarding a new business unit and I do not want them to be redirected to the Flow, I want them to use the Standard out of the box Salesforce create Opportunity screen. Is this possible?
