I have a CreatedDate on Case (standard field) which is Opened Date/Time.
I want to see the day of the week this is.
CASE(MOD(DateValue(CreatedDate) - DATE(1985, 6, 24), 7), 0, "Sunday", 1, "Monday", 2, "Tuesday", 3, "Wednesday", 4, "Thursday", 5, "Friday", 6, "Saturday", "Unknown" )
I tried this formula above, but the day was a day off.
For example 08/10/2023 is Thursday, I'd like my new formula text field to show "Thursday", so I can run a Report on what days my Cases are coming in.

You can make use of the WEEKDAY standard function to fulfill your requirement.
Try with the below formula
CASE( WEEKDAY( DATEVALUE(CreatedDate) ), 1, "Sunday", 2, "Monday", 3, "Tuesday", 4, "Wednesday", 5, "Thursday", 6, "Friday", 7, "Saturday", "Unknown")
