Currently, I have Salesforce templates that use unique Unsubscribe links for Contact and Lead records. I'm looking for a "one ring to rule them all" kind of control. So, can anyone verify that the Unsubscribe from a SF email will update the Pardot Opted Out field?

If you use Salesforce Engage functionality, you should be able to do it. It is an extension of Pardot app mainly intended for sales reps who can use 1-1 emails to their assigned leads/contacts and unsubscribe link will make sure both systems are in sync, provided the sync behavior is set to "use the most recently updated".
